Fixes for `\MakeUppercase` and PDF strings. Update documentation and tests. ``\textvarTheta`` is now an alias for ``\textTheta`` (not ``\textThetasymbol``). The AMS-math command ``\varTheta`` sets the *letter* Theta in italic shape.
